Last Minute Christmas Gifts: Hot Chocolate Mix Recipes
Hot cocoa and hot chocolate mixes are great to put in festive containers and slip in a stocking or wrap in a special mug. For the frugal among us they are a Christmas staple. Sometimes all too predictable.
And some of the mix recipes out there….eww! Just because I am cheap does not mean I am willing to settle for insipid chocolatey water!
Try these. They are rich, delicious, and somewhat unexpected.
Rich Hot Chocolate Mix
4 cups granulated sugar
1/2 vanilla bean, split crosswise
1 1/2 pounds semisweet chocolate, coarsely chopped
4 oz milk chocolate, coarsely chopped
4 dark chocolate, coarsely chopped
2 cups unsweetened Hershey’s Special Dark cocoa
Place sugar in large bowl. Split half vanilla bean lengthwise, scrape seeds into sugar, and add pod. Work seeds in with your fingers. Cover and let stand a day or two at room temperature.
In food processor process semisweet chocolate and milk chocolate until finely ground, using 4-second pulses. (Process in two batches if necessary.)
Remove pod from sugar. Add ground chocolate and cocoa powder to sugar and whisk to blend.
For each serving, heat 4 ounces milk and 4 oz half and half in microwave for 2 minutes. Stir in 1/3 cup mix.
